That's really good fish. The question is how fresh is it? Sushi should be consumed pretty close to when it was caught and not frozen if possible. If you're not sure, you should grill. |

it's been frozen for about a week... would love to eat it raw if possible although i always thought sushi had to be frozen for a little bit (not exactly sure how it works).. but yeah, pretty sure it's been completely frozen for at least 5 days |

I believe that most fish that's intended to be used as sushi is frozen to kill parasites. That way, you can eat dead raw thawed parasites. |

Should be fine to eat raw. The yellow tail looks like the tail piece though, lot of fibrous stringy bits there, you have to know how to cut it proper. |

Ahhh... you must've taken a parasitology class! http://www.chow.com/stories/10163 Looks like you have to freeze for 7 days to kill the buggies "Freezing: If you plan to eat fish raw or in ceviche, you can kill any parasites by freezing it ahead of time. Fish needs to be frozen at –4°F (–20°C) or below for seven days, or at –31°F (–35°C) or below for at least 15 hours after it’s frozen solid. These conditions may not be suitable for freezing large fish over six inches thick" Waiter, that'll be two orders of nematode rolls to go please |

Sushi fun fact: ever have squid sushi? Wonder why its always cut with lots of little, parallel cuts (sengiri)? Its to kill the parasites that live in the squid (some kind of worm I think). So that way you can eat diced parasites as opposed to live ones! |

i've got a friend that used to fish in the surf, pull in a catch, cut it up, rinse it in sea water and eat it there on the beach with soy and wasabi. That was Whiting. Depends on the fish. Gotta be careful with reef fish. Some have poisonous toxins. I would grill, steam or crumb that fish you have there. BTW who's in your Avatar? |
