Post cutting the calamari
how easy is it to open those? After shilling out the dough I was a bit curious about pulling them apart but with it bein' soft vinyl I wasn't sure if I'd pop off something and not be able to put it back together again.

No problem. It is soft vinyl after all. A hairdryer to heat things up and make them pliable will help immensely though.

Typically it is easier to get them apart than to re-assemble them. but that is where the hairdryer comes into play...
