 NEEDED: Easy Side Dish for Christmas!
Easy as in "I can't put it in and not think about it til its time to serve it"
Must be:
1. Portable (I'm taking this to someone else's home-so either something that travels well cooked, or something easy to make on the spot at their house
2. vegetarian. There are veggies in the house.
3. Must not involve sweet potatoes. that is what they are making.
4. Something kids will eat. They have a 4 year old.
thoughts!?

what about a 7 layer dip? leave off the guacamole to save money and kids are less likely to like that one.
it tastes like tacos so kids should like that
dont have to cook anything - just empty containers into a bowl
not very xmassy, but it's good for party goers

If you want the easiest fudge ever, here's the recipe:
1: Put 1 whole jar of creamy peanut butter, or chunky if you like chunky fudge, and 1 regular size can of buttermilk icing (like for cakes), it can either be chocolate or peanut butter into a glass baking pan.
2. microwave it together until it's very soft and melty (like 3 minutes).
3. Stir it together, refrigerate that shit, and you have some awesome fudge!

True. Its sit down dinner. The hosts are making a ham & a tofurkey. and some sides, but i volunteered to bring some along.
I was thinking maybe mac & cheese-home made, not like kraft.

what about instant mashed potatoes with cream cheese and sour cream mixed in
make the potatoes and add 8oz of cream cheese and 8oz of sour cream
heat a little more to make sure all that cream cheese gets melted

what about green bean casserole? it's really easy - just dump everything in and bake it
stole this from cambell's or something:
Prep: 10 minutes
Bake: 30 minutes
Serves: 6
Ingredients:
1 can (10 3/4 oz.) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or 25% Less Sodium)
1/2 cup milk
1 tsp. soy sauce
Dash ground black pepper
4 cups cooked cut green beans
1 1/3 cups French's® French Fried Onions
Directions:
MIX soup, milk, soy, black pepper, beans and 2/3 cup onions in 1 1/2-qt. casserole.
BAKE at 350°F. for 25 min. or until hot.
STIR . Sprinkle with remaining onions. Bake 5 min.
TIP: Use 1 bag (16 to 20 oz.) frozen green beans, 2 pkg. (9 oz. each) frozen green beans, 2 cans (about 16 oz. each) green beans or about 1 1/2 lb. fresh green beans for this recipe.
For a change of pace, substitute 4 cups cooked broccoli flowerets for the green beans.
For a creative twist, stir in 1/2 cup shredded Cheddar cheese with soup. Omit soy sauce. Sprinkle with 1/4 cup additional Cheddar cheese when adding the remaining onions.
For a festive touch, stir in 1/4 cup chopped red pepper with soup.
For a heartier mushroom flavor, substitute Campbell's® Condensed Golden Mushroom Soup for Cream of Mushroom Soup. Omit soy sauce. Stir in 1/4 cup chopped red pepper with green beans

my first thought was the 7 layer dip too. they're so easy to make and people can pick while they're hanging around the kitchen.
i used to make one regular and one vegan without sour cream and cheese (i know..that isn't 7 layer) and my friends would be so pleased.

This recipe is awesome...very tasty (and the chicken broth can be easily replaced with veggie broth). Then again, you can never go wrong with mac and cheese....

If you want something that kids will eat, then Mac n Cheese is your best bet. Only a few kids will eat anything green. If there's no potato sides, you could make potatos au gratin and for a curve ball, you could use a different kind of cheese instead of cheddar, or blend together a couple cheeses for either dish.

My dad's from TN, so even growing up in the midwest deep fried, sausage and hot sauce in everything was kinda normal. Besides, where I live in the Burbs' NO ONE is FROM the south.
Chorizo mac and cheese......................with bacon (for texture)?
