Post indian food recipes?
my new obsession

i can't get enough

does anyone have any recipes of dishes that can be made pretty easily? i'd like to be able to come home and whip something up after work for dinner

This is my recipe for chicken Tikka Masala and it never fails to draw raves, even from my two Indian friends. I know it looks very complicated and it looks like it has a zillion ingredients but they're mostly spices and indian food is all about the spices. It actually comes together very quickly since the first half of the ingredients go into the marinade (which you do ahead of time) and the sauce cooks while the chicken is cooking. . To save time, I also sometimes omit the 'grilling on skewers' part of the recipe. Instead, I cut the chicken into long strips and broil them in the oven then cube them afterwards... (oh also, this has a LOT OF salt. I cut that by at least half.)

1 cup yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons freshly ground
black pepper
1 tablespoon minced fresh
ginger
4 teaspoons salt, or to taste
3 boneless skinless chicken
breasts, cut into bite-size
pieces 4 long skewers

1 tablespoon butter
1 clove garlic, minced
1 jalapeno pepper, finely
chopped
2 teaspoons ground cumin
2 teaspoons paprika
3 teaspoons salt, or to taste
1 (8 ounce) can tomato sauce
1 cup heavy cream
1/4 cup chopped fresh cilantro

DIRECTIONS:
1. In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.
2. Preheat a grill for high heat.
3. Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.
4. Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

I would recommend the Bombay Cafe cookbook (Paperback)
by Neela Paniz (Author). Bombay cafe is an excellent indian restaurant in Los Angeles, and this is their cookbook. I haven't tried it myself. :wink:

Ah, my favourite!

Try this biryani rice recipe- super easy. Had it all the time during my Michigan days.
Can't remember the steps, but the instruction on the jar is pretty easy.
Can do it without the meat, too.

1 Jar Patak Biryani Rice Mix- choose either medium or hot.
Bismati rice- its a long grain type- cooks drier than the std pilaf type.
Rice cooker.

Fry the mix with the rice grain until evenly mixed before putting them in the rice cooker. Adding water to the rice cooker can be tricky though. I usually pour in water until its about half inch over.
You can tossed in some cooked cashew nuts and golden raisins. A substitute for raisins would be diced apricots. Avoid the black raisins.

That's all to it. Goes well with lentil soup too.
Oh, and don't forget your favorite Bollywood movie!

i'm gonna have to find this stuff. i am very fortunate to live in a community with a large indian population, so there are restaurants and markets around. our best buy even has a bollywood section in the dvd's! :)

(we have a lot of mexican, asian, and even some eastern european people here too so this NC town can feel pretty diverse. it's cool)
